A restaurant from now on focusing on ingredients from Tosa A new restaurant opened in Ginza! A friend of mine told me about it, so I paid a visit. It is a cozy restaurant with only a counter. The owner-chef is Mr. Yamaguchi. He used to be a buyer of ingredients. He seems to be very particular about his food. His basic style is to pair dishes with sake (wine). Chef Yamaguchi, who is a cheese professional, is also particular about cheese dishes! Meat is vacuumed using the low-temperature cooking method and cooked at 63 degrees for 40 minutes. It's an obsession that starts on the spot after the visit! It seems like he is still experimenting with new methods. This is a restaurant to look forward to! Let's go back again!
