At our restaurant, we only offer the highest quality black-haired Wagyu beef. The carefully selected domestic black-haired Wagyu is so fresh and of such quality that it can be enjoyed raw. We source from regions such as Kobe, Maezawa, Omi, and Miyazaki, but by not specifying the origin, we can provide only the freshest and highest quality meat that matches the season, which is our commitment.
We use 100% natural carbonated water from Oita Prefecture for shabu-shabu. By using carbonated water, the scum is easily removed, the meat becomes tender, and the flavors of the meat and vegetables are enhanced.
To enjoy the original flavor of the meat, we have prepared six types of natural salts and seven condiments. The foreign salts in front are: the white is 'Mediterranean Sea Salt', the red is 'Andes Mountain Red Rock Salt', and the gray is 'Italian Truffle Salt'. The Japanese salts in the back are: the white is 'Miyako Island Snow Salt', the green is 'Wasabi Salt', and the brown is 'Smoked Salt'.
The Arokana chicken, native to Chile in South America, lays pale blue eggs known as the 'Blue Happiness Egg.' The laying rate is about one-third of that of regular chickens, making it very rare. Additionally, its nutritional value is extremely high, with lecithin being about twice that of regular eggs. It is good for the skin and contains anti-aging components. Vitamin B1 is about 10 to 20 times higher, providing effects for fatigue recovery and increased immunity. Vitamin E is about 11 times higher, helping to thin the blood and boost metabolism. Enjoy these delicious eggs with a rich, deep flavor that stands up to the taste of sukiyaki.
