This course is an upgrade of the dishes in the Teppen Course! Iberico pork shabu shabu shabu is replaced with tuna in a pot with leeks, You can enjoy the rare fatty part of tuna with green onion in a pot! Finish with soba noodles! We have recreated the local dish 'Grilled Mackerel' from the Wakasa region of Fukui Prefecture. Enjoy the plump, grilled mackerel with ginger soy sauce!
We quickly dried the fish overnight, ensuring it has a good amount of fat and freshness. It has few small bones, and the flesh is fluffy and tender with an astonishing amount of fat that resists soy sauce!
