Cacao nibs, cocoa, chocolate. We used various materials from the process of turning cacao beans into chocolate to bake five uniquely flavored cookies. This cookie can, crafted entirely by hand from cacao to chocolate, allows you to fully enjoy the essence of cacao, a hallmark of Minimal.
We re-examined the combination of chocolate and Baumkuchen, which tends to be heavy, from scratch, and thoroughly addressed each element of 'flavor', 'aroma', and 'texture'. It is a Baumkuchen that achieves the contradictory charms of 'satisfaction and lightness', made possible by Minimal's sincere approach to chocolate making, and is something you will want to eat again and again. Please enjoy the pleasant chocolate aroma that fills your nostrils with the first bite and the addictive lightness that comes from the lingering aftertaste.

The 'Chocolate Langue de Chat' is a cookie tin filled with 27 pieces of Langue de Chat made with single-origin Ghanaian cocoa beans. This cookie tin is unique to Bean to Bar chocolate specialty shops. Different concentrations of Ghanaian cocoa beans are used in both the ganache and the cookies. The crispy cookies are mixed with 80% bitter chocolate, while the ganache features chocolate with a strong sweetness of 60% cocoa. The Langue de Chat, with its light texture and irresistible flavor, will make it hard to stop reaching for more.

Cacao from the Philippines aged for 2 years features a mellow richness and a pleasant nutty aroma. By taking the time to age it, the overall flavor of the cacao harmonizes smoothly, transforming into a taste that can only be obtained from these beans. This cacao bean is finished with a dark roast, and by intentionally making it 'coarsely ground', the strong flavor and crunchy texture of the cacao are preserved.
This is a domestically produced rum cask received from the Boso Oi Warehouse Distillery in Minamiboso City, Chiba Prefecture, which handles everything from sugarcane cultivation to rum production in Japan. By carefully infusing and aging cacao beans for three months, we have achieved a chocolate infused with rum aroma.
