Under the guidance of the health department, we have met all standards for processing, temperature control, equipment, and cooking standards, and obtained permission for handling raw meat for consumption in October 2012. Additionally, we have commissioned Morisan Shokai, which holds processing permission for raw food, to process the carcasses in Omihachiman City, Shiga Prefecture. The Omi beef from Kō is handled in facilities equipped with the latest hygiene equipment. Safety and security mean that everyone involved must not neglect thorough daily hygiene management. This is our belief at Kō. Everything is for the smiles and safety of our consumers. *We aim for zero risk of food poisoning, but we advise children, the elderly, and those with weakened immune systems to refrain from consumption as much as possible.
