Carefully brewed using traditional methods of all wooden barrel fermentation and namamoto production, this sake is filled with the dedication of Gokyo. Yellow is a classic junmai sake that can be enjoyed year-round. While yellow koji is commonly used in sake brewing, this Gokyo Yellow uniquely employs white koji, which is typically used in shochu production. By applying it to sake, citric acid is created, resulting in a sweet and sour flavor.
Suigei is a sake brand created by Suigei Brewery based in Kochi Prefecture. Its history dates back to the Meiji era over 150 years ago. The name Suigei literally means 'drunken whale,' evoking a grand image that is strongly connected to the marine culture deeply rooted in Kochi's environment. It is said that this name carries the meaning of 'providing a rich and profound flavor akin to the vast ocean through sake.'
