Don't stop the camera! I stopped by after watching "Don't Stop the Camera! There happened to be one seat available. We had octopus, flounder, abalone (including the liver), and bonito as snacks, followed by nigiri and a small bottle of beer. The owner is a hard-nosed guy who doesn't overcook his nigiri or preparation, but rather makes the best use of the ingredients in an Edomae style. It is a sushi restaurant like a boys' school. The abalone, sea urchin, and chicken clams are superb. The story about Ishigaki clams was interesting. The bill was 17,200 yen. Conscientious for this area of Shinbashi.

This is a model restaurant not only for experiencing the taste of Edomae sushi but also for understanding its culture. The chef embodies Edomae sushi and is a craftsman that sushi chefs admire.

This is a restaurant that I have been visiting for over 20 years since my training days. All the customers who come here are regulars, and the fact that it continues to be loved without change is truly wonderful. I think to myself, 'This is what a restaurant should ideally be like,' and it is a place that can be considered one of my guiding principles.

Sushi Archive 2020 Shinbashi Shimizu No pictures of sushi because of 🙅‍♂️, but we were very satisfied with the fun story of the owner and the delicious sushi 🍣.
