We source the finest fish caught that very day and have it air-freighted to us. Throughout the year, we offer the best seasonal ingredients and recommended dishes. Additionally, to allow you to enjoy Japanese sake in a relaxed setting, we’ve created a “Snacks & Nigiri Course with Sake Pairings” as part of our set menu. You can enjoy sake carefully selected by our sommelier and sake sommelier alongside our seasonal dishes. We offer approximately eight varieties of carefully selected sake to pair with our appetizers and nigiri.

<About the Shari> The rice used for the shari is two-year-old rice harvested at the foot of the Shirakami Mountains, an area rich in natural beauty. We use red vinegar in the mixture to serve authentic Edomae-style sushi, just as it was enjoyed during the Edo period. Red vinegar is a high-quality ingredient that takes a long time to brew, and because sushi rice made with red vinegar requires careful handling, its use gradually fell out of practice. However, to ensure you can enjoy this authentic Edomae-style sushi, we use red vinegar brewed using traditional methods. The sushi rice, tinged with a faint light brown hue, gains a deeper, more savory flavor thanks to the rounded notes of the red vinegar.
