This sake rice, which is suited to the climate and environment of Michinoku and Hōshū, has characteristics such as short stalks, cold resistance, large grains, and disc-shaped white hearts. After 18 years of crossbreeding and cultivation, it was successfully developed and named 'Sake Future.' This Junmai Ginjo sake is brewed from the sake rice 'Sake Future,' which was created by the previous generation, Tadaaki Takagi, over 18 years. The aroma is reminiscent of La France pears and Muscat grapes, and with the first sip... a fruity sweetness that matches the aroma spreads in the mouth. The aftertaste features the umami of rice typical of kimoto brewing, along with the refreshing crispness unique to Shinsei sake.
The mid-range 'Shinsei S-type' offers a bubbly sensation similar to 'Shinsei R-type' when tasted, with acidity and refined sweetness spreading in the mouth. The aftertaste features a crisp finish with umami, and it is characterized by a distinct change in mouthfeel between the first and second halves.
The high-class 'Shinsei X-type' is an advanced model, offering a drinking experience akin to that of a Junmai Daiginjo sake. It has a gentle mouthfeel, free from off-flavors and bitterness, making it enjoyable even for those who are not fond of the unique aftertaste of sake.
The 'Earth' brewed with 100% pesticide-free cultivation is the work that most reflects the commitment to agriculture among the 'Colors' series. The ingredient 'Rikuho 132' is a rice variety that originated in Akita Prefecture during the Taisho era, and it is a rice that has 'Kame no O' and 'Aikoku', two of the 'Three Major Japanese Varieties' from the Meiji era, as its parents.

White Koji Junmai Sake Amane Cat, 13th Generation, 1950 yen. It can be said that 'Amane Cat' is the most unique work in the Shinsei lineup. It is brewed using not only the usual sake koji but also shochu koji (white koji) with a strong acidity, resulting in a sake that offers an acidity unlike typical sake. As a work that succinctly represents the experimental spirit of 'Shinsei', it continues to stand out even after 12 years of becoming a staple. Furthermore, like 'Colors' and 'Hinotori', it is made using wooden barrels, and in recent years, its individuality has been further enhanced. As a spin-off, there is a lively cloudy sake 'Amane Cat Spark' that undergoes secondary fermentation in the bottle. Noble Sake Hinotori, 14th Generation, 2580 yen. Developed in 1973 by a National Tax Agency technician based on the oldest sake brewing method in Japan, 'Noble Sake' is made by replacing part of the water used in the brewing process with sake.
