H1

H1, an Italian restaurant in Ebisu, offers unique and creative cuisine using carefully selected ingredients from all over Japan.

The restaurant features a chic and relaxed atmosphere based on black and gray tones. Eight counter seats are arranged around an open kitchen, allowing diners to enjoy the chef's cooking up close.

In October 2024, Chef Tetsuya Horie became independent and changed the name of the restaurant from "H" to "H1" for a new start. Chef Horie has used his experience in Italy and Europe to create dishes with respect for the producers, focusing on fresh vegetables and fish purchased directly from the producers. Along with the name change, the restaurant has adopted a two-fold style of a la carte and course dining, resulting in a more diverse menu structure. H1 is making new history in Ebisu as a restaurant where diners can enjoy unique Italian cuisine created with the chef's sensitivity and passion.

Tetsuya Horie was born in 1988 in Kanagawa Prefecture. Influenced by his father, a French chef, he began his culinary career when he was in junior high school. He initially started his career as a pastry chef, and later, after training in Tokyo, moved to Italy at the age of 24. In Italy, he trained for a total of four and a half years at the three-star restaurant "Le Calandre" and the two-star restaurant "Alli Amici," and also gained experience at restaurants throughout Europe, including Scandinavia and Croatia. After returning to Japan, he became the chef of "H accca" in Kagurazaka in 2020, and in October 2021, the restaurant changed its name to "H (accca)" and moved to Ebisu. In October 2024, Chef Horie became independent and changed the name of the restaurant from "H" to "H1" to start anew.
