We procure fresh domestic clams daily from Toyosu Market and use a 100% clam broth. We have increased the quantity from before to further enhance the rich umami flavor of the broth.
We layered the umami of scallops over a broth made from 100% clams, combined with a special salt dip. Enjoy the luxurious flavors of these two types of umami.
A soup that uses a large amount of Omar lobster in chicken white broth, resembling a bisque. It is rich yet crafted to be drinkable to the last drop.
