Shinbashi, Ginza, Tokyo Nobetsu is rumored to be a "famous restaurant for aged sushi". I visited for the first time on the recommendation of an acquaintance. Omakase course (13,200 yen including tax) 〜Snacks Clam soup Sashimi of matsukawa flounder that has been aged for one week Fried and soaked winter vegetables Grilled Spanish mackerel with yellow fish ball Steamed abalone with liver sauce Steamed egg custard with eel and bonito sauce Nigiri〜〜〜 Sashimi Kelp sashimi of sea bream (Shimoda) Smoked squid (Awaji) Kohada Kumamoto Aged for 4 days Red meat Shiranu Aged for 16 days pickled cucumber Medium fatty tuna Shiranui Aged 16 days Large fatty tuna Shiranui Aged for 16 days Grilled scallop with isobe Aji Aji Tokushima Aged for 6 days Salmon roe and yuzu Shrimp sashimi on kelp Toyama Anago Nagasaki Dried gourd roll Miso soup with grated yam baked egg 〜Sake Kuroryu Hakurakusei Mimuro Cedar Denzake Tanaka Rokugo Tengu Mai A variety of unusual snack dishes, all very tasty with their own individuality shining through.
