He is the owner of the famous Kyoto restaurant "Tominokoji Yamagishi" and is also well versed in tea ceremony, flower arrangement, and calligraphy. He switched from sushi chef to kaiseki chef and founded Tomikoji Yamagishi in 2015. Since then, he has opened 8 restaurants mainly in Kyoto and Tokyo. He has also authored a book titled "Tomikoji Yamagishi Shuzo Kochi Ceramics Meihin Selections," which introduces masterpieces of ceramics collected for use in cooking. Through these activities, he continues to create new values while preserving the traditions of Japanese cuisine.
