Fukui Prefecture / Daiginjo / Flavor: A long-selling daiginjo sake that was released in 1975, pioneering the application of aging techniques used in slightly dry wines. It has a sharp yet moist and voluminous flavor.
Yamaguchi Prefecture / Junmai Daiginjo / Flavor: Using Yamada Nishiki polished to the extreme of 23%, we challenged ourselves to create the best Junmai Daiginjo. It has a gorgeous aroma and a clean honey-like sweetness when tasted. The finish is crisp while the aftertaste lingers long.
Aichi Prefecture / Junmai Daiginjo / Flavor: Dry with a refreshing mineral quality, a transparent elegance. It has a gentle and refreshing aroma reminiscent of lychee, followed by a rapid spread of sweetness and umami in the mouth, leaving a clean and crisp acidity in the aftertaste.
Tochigi Prefecture / Flavor: Pursuing the ultimate fruity flavor like a Bordeaux wine, this Jō uses a blending technique called assemblage, combining three types of sake made from Yamadanishiki, Kamenoo, and Omachi in a golden ratio. It has an elegant aroma with transparency reminiscent of grapes and La France. The delicate yet rich contrasting flavors create a unique taste woven from the distinct characteristics of the three types of sake rice.
