【Tokyo Ginza】 Opened in 2022. A renowned sushi restaurant led by the young and enthusiastic chef Kato, located in a prime area of Ginza lined with numerous high-end shops. The interior is adorned with the light blue color that reflects the restaurant's name. Thanks to the chef's brightness and personality, you can enjoy your meal in a relaxed atmosphere without feeling tense. Seasonal Water Sky Blue Course Appetizers ◇ Simmered Octopus and Daikon ◇ Cod Milt with Ponzu The seasonal cold milt. When you think of winter, you think of milt. This year, it has been scarce and hard to obtain. There is no unpleasant odor in the ingredients, and the seasoning is just right and delicious. ◇ Fried Fugu ◇ Sempohshi Oysters The oysters from Sempohshi, nurtured in the rich sea of Kushiro, Hokkaido, are characterized by their plump flavor, full of the scent of the tide and umami. Each one pairs perfectly with the sushi. Overall, the taste was very delicious, and I encountered a wonderful restaurant that includes excellent service and atmosphere. Be sure to enjoy the chef's heartfelt "One Piece Soul".
