Sitting at the counter in a calm space filled with the warmth of wood is exciting. The first bowl has a gentle aroma, and the umami of the broth smoothly enters the body. The cherry salmon wrapped in cherry leaves and the fragrant grilled bonito are very impressive. The combination of mountain vegetables and other vegetables is skillful, and the changes in texture, from crunchy to creamy, are enjoyable. The warm small pot and shabu-shabu are also pleasant, with the cooking being exquisite and enhancing the quality of the ingredients. I was surprised by the sweetness of the fruit tomatoes, and I was able to enjoy a happy feeling until the end.
