I feel that moving from a shared space in Nakameguro to Ginza has created an even more refined atmosphere. The course, with its balance of skewers and Japanese meat dishes, is pleasant and keeps you excited until the end. The heart and Sasuke pork, grilled slowly over binchotan charcoal, are richly aromatic and have an irresistible tender texture. The dish combining chawanmushi with junsai and tail soup is refreshing yet impressively rich in flavor. The chateaubriand rice that appears at the end has an excellent harmony between the sweetness of the meat and the rice, making you want to ask for a second helping. The staff carefully suggested drinks, making the pairing with alcohol enjoyable.

As I sat at the counter, the calm stone walls and large wine cellar caught my eye, raising my expectations. The first dish, the heart, was roasted to perfection, and with each bite, the juices spread delightfully. The following Sasuke pork was served with grated daikon and tororo, offering a refreshing taste while enhancing its sweetness. The black tongue is said to be cooked in three stages, with a crispy exterior and a moist interior, accented by wasabi and salt. Dishes like burdock wrapped in zabuton and hand rolls of tete de filet kept coming out, adding a playful touch that excited me. The Chateaubriand I savored at the end was rich in the umami of red meat, leaving me feeling happy until the very last bite.
