Ecru - Generation - 2021 commonly known as 'Ecru'. 1880 yen, a bottom line using the sake rice 'Sakekomachi' born in Akita. Like Lapis, it adopts a polishing method using 'flat polishing'. You can enjoy the pure taste reminiscent of the melting snow in cold regions, characteristic of 'Sakekomachi'. As an entry model, we hope many people will enjoy this sake. Cosmos - Autumn Cosmos - 2021 commonly known as 'Cosmos'. 2280 yen, 'Improved Shinkou' is a sake rice suitable for brewing that was first born in Akita in Showa 34. Since it has 'Shinkou No. 190' as a parent, it is genetically related to 'Miyama Nishiki'. However, the taste can be said to be the exact opposite; while 'Miyama Nishiki' gives a hard impression, 'Improved Shinkou' is smooth and has a flowing taste. Commonly known as 'Viridian'. 2980 yen, a work using the high-quality sake rice 'Miyako Nishiki' from Akita. The polishing ratio of the raw rice is 50% using flat polishing, which brings out the potential of 'Miyako Nishiki' the most. Additionally, most of the cultivated area has switched to organic farming, and the quality of this work has improved in recent years. White Koji Junmai Sake Amane Cat (Amane Cat) 13th Generation 1950 yen. Among the Shinsei lineup, it can be said that 'Amane Cat' is the most unique work. It is brewed using not only the usual koji for sake but also a strong acidic shochu koji (white koji), resulting in a sake with an acidity that is quite different from typical sake. It can be said that this work succinctly represents the experimental spirit of 'Shinsei', and even after 12 years of becoming a standard, it still stands out remarkably. Furthermore, like 'Colors' and 'Hinotori', it is made using wooden barrels, and in recent years, its uniqueness has been further enhanced. As a spin-off, there is a lively cloudy nama sake called 'Amane Cat Spark' that undergoes secondary fermentation in the bottle. Noble Sake Hinotori (Hinotori) 14th Generation 2580 yen. In 1973, developed based on the oldest sake brewing method in Japan by a National Tax Agency technician, 'Noble Sake'. Sake is usually brewed with rice, rice koji, and water, but in this case, part of the water is replaced with sake during brewing. Since the sake undergoes fermentation again in the mash, the resulting sake becomes richer and sweeter. This work is named 'Hinotori' to reflect the transformation of the sake. Additionally, the sake added is aged in Mizunara barrels for one year, and the vanilla-like aroma obtained enhances the sweetness of the sake.
