Our restaurant uses two types of local chicken. We use the rare Shinano chicken, which is shipped directly from a poultry farm in Nagano Prefecture, with only about 300 birds available each month. Furthermore, with the cooperation of the poultry farm, we extend the rearing period for this rare chicken, allowing it to be shipped as a premium Shinano chicken. It has a moderate texture, and the high-quality fat and umami of the chicken are further concentrated. The second type is the Hinai chicken from Odate City in Akita Prefecture, which left a strong impression on the owner when he first tasted it. It is one of Japan's three major local chickens, and the poultry farm in Odate City is among the top producers of Hinai chicken. This Hinai chicken is also shipped directly from the farm, selecting the largest whole hens of the day. The larger Hinai chickens are full of meat flavor and the lingering taste of high-quality fat. We use these two types of local chicken in different parts, processing and skewering them daily in our shop. You can enjoy the differences in rearing days and chicken breeds. Considering the pairing with wine, we also offer high-quality ingredients from various countries, such as lamb, duck, black-haired wagyu beef, wild boar, and deer, all cooked to perfection. We also prepare seasonal vegetables that are safe and fresh from domestic sources. Depending on the season, we may have special vegetables sent directly from farmers. We sprinkle a unique blend of sea salt from France's Guérande and Setouchi sea salt, and grill each skewer carefully over the highest quality Kishu binchotan charcoal.
