It is a high-quality fish that fishermen in Hamada unanimously agree is the 'most delicious,' and its reputation is far above that of sea bream and others. It is especially valued among food enthusiasts and is even referred to as the 'phantom fish' and 'white meat toro.' It has rich, plump white flesh. Please enjoy it with sake.
Due to the short aging period, the quality of the ingredients and the skill of the rice koji directly reflect in the taste, making it impossible to disguise with 'Saikyo Miso.'
