This Japanese kaiseki restaurant offers the full bounty of seasonal wild and natural ingredients carefully selected by Chef Hitoshi Sato. Enjoy dishes featuring game and seasonal produce, thoughtfully paired with sake, wine, and teas chosen to complement each course. We provide food that is naturally delicious and gentle on the body.
Japan’s traditional fermentation techniques have been handed down through generations. Mastering and refining these methods is Hiroaki Tokuyama, owner of Tokuyama-zushi on the shores of Lake Yogo in Shiga Prefecture.
We also offer Tokuyama-zushi’s specialty, jukuzushi (aged/fermented sushi), which is rarely experienced in Tokyo.
